Cellar work is where a batch is most easily lost and where the chemicals are most dangerous. Transfers without shortcuts, gravities and temperatures logged on schedule, tanks and hoses cleaned to standard, and the right PPE for the chemical being handled.

What usually goes wrong

When to sign someone off
